Primal Blueberry Pikelets

A pikelet is a type of pancake made in New Zealand and Australia. They are generally smaller than a pancake with a slightly heavier texture. Traditionally, both pancakes are made from flour, egg and milk. So are these, except it’s coconut flour and coconut milk. I have been eating my fill of berries this summer in England, and this is just one more way to incorporate this healthy fruit into your diet.



2 eggs
1/3 cup coconut cream
2 heaped tablespoons of coconut flour
1/2 tspn baking powder
1/2 tspn cinnamon
1/4 cup blueberries
Coconut oil or butter for frying
Banana and raw honey to serve


Whisk two eggs together in a bowl. Mix in the coconut milk, then add the coconut flour and baking powder and stir thoroughly. Allow to sit for ten minutes – this makes such a difference to the texture! When ready, gently mix through the blueberries.

Heat a frying pan, and melt your fat of choice. When it is hot enough, add a spoonful of mixture to the pan and allow it to form a flat circle. Fry for about two minutes each side.

Serve with sliced banana and drizzled with a little honey for a nice morning treat!
