A friend asked if I could put up a recipe for the salads I bring to work. Which I thought would be difficult since I don’t follow any set recipe, I just throw together what is in the fridge. But every week when I do the groceries, I just make sure I buy the general ingredients on this list.
Lettuce – any kind you prefer
Red onion or Spring onions
Leftover roast meat, or ham, chorizo, tuna etc – your preference
In the morning before work, or in the evening prior, take out all the vegetables and wash, peel and chop. Quantities depend on how many people you are making it for, but you should be able to guess how much you will eat in one serving.
Place all ingredients into a bowl and toss with salad servers. As a dressing, i like to squeeze in a bit of lemon juice and drizzle some olive oil as I toss.
Place into a transportable container, and enjoy at lunch time
