Leftover Roast Chicken Salad

Here’s another easy lunch recipe, you can have either at home or take to work. I get quite bored having the same salad every day, so I’m trying to mix it up a bit.

Since we’ve moved into our own place in the lovely Brighton, we have been very British and had a delicious roast every sunday! It fills the house with amazing smells, and warmth from the oven. And: leftover roast makes for a very yummy salad the next day.

Ingredients

100g leftover roast meat – I’ve used chicken here
Leftover roast vegetables you may have – I have sweet potato, carrot, parsnip and onion
2 handfuls of lettuce
1 handful shredded cabbage
Salad vegetables – red pepper, tomatoes, cucumber etc
1 tbsp home-made mayonnaise

Directions 

Grab the cold meat and vegetables, and chop them into bite-sized pieces.

In a bowl or plastic container, place lettuce and shredded cabbage. Add the meat and vegetables and the mayonnaise, and toss to combine. Super easy, quick, healthy and a great way to ensure you don’t waste those leftovers.
