These little guys are so yummy, and so quick to make! The recipe is only for 8-10 small cookies because I always find it so overwhelming when recipes ask for say, 3 cups of almond flour – which can be very expensive! But feel free to double, triple, quadruple the recipe if you want to. You shouldn’t eat too many of these in one sitting, as the main ingredient is almonds which are very energy dense.
1 cup of almond meal/almond flour
2 tbsp coconut flour
1 tbsp cocoa powder
1/4 tsp baking soda
1 tbsp desiccated coconut
1/4 cup of honey or maple syrup or sweetener of your choice
50g butter, melted
Combine all the dry ingredients in a bowl. Add the melted butter and honey, and stir well to combine. If it seems too wet add some more coconut flour, but it should be slightly sticky. Roll into 8-10 balls, then place onto a baking tray lined with baking paper, and flatten with a fork. Bake for 10 minutes at 180°C – they don’t take long!!
I have served them below with a dark hot chocolate drink. Mmm, so much chocolate!
