Greek Style Baked Fish

This is practically a one-dish meal. Just pop everything into the oven and ta-da! I love the saltiness of the olives and feta, especially with fresh fish and lemon.


Ingredients – for two people

2 fillets of white fish
1/2 cup olives
50 – 100g feta cheese
1 lemon

1 zucchini
1/2 cup cherry tomatoes
1 red onion
1 yellow capsicum (bell pepper)
2 tbsp olive oil
Salt and pepper



Pre-heat oven to 180°C.

 Slice the lemon into rounds and lay them flat in a baking dish in a single layer. Place the fish fillets on top of the lemon, then sprinkle with the feta and olives, and a couple of cherry tomatoes. Roughly chop the remaining vegetables into bits all about the same size, then toss in olive oil and season with salt and pepper. Place into a greased roasting dish.

Place both dishes into the oven and bake for 20 minutes, until the fish is cooked. If you like your vegetables cooked well, place them in the oven ten minutes before the fish.

Serve with a wedge of lemon and enjoy.
