Believe it or not, but bacon and eggs every single morning can get a bit boring! A frittata is just a variation of eggs in the morning, and I always use leftovers for lunch the next day. It’s so easy, all you need is a bit of time in the morning, – but you can do other things while it is cooking in the oven. Broccoli is another cruciferous vegetable, and is a good source of vitamin C and folate. It also contains vitamins A, K, calcium and several antioxidants. All in one simple vegetable. Ham, well, ham tastes good!
1 head of broccoli
1 packet of ham
Salt and Pepper
Butter or oil to grease the dish
Pre-heat oven to 180°C. Roughly chop the broccoli into small pieces. Do the same with the ham.
Break all the eggs into a bowl, sprinkle with salt and pepper, and whisk until all the yolks are broken.
Lightly grease an oven dish, then place the ham and broccoli in. Pour over the eggs and make sure everything is covered.
Place in the oven and bake for 40 minutes. To check that it is cooked, insert a knife. If it comes out clean (no gooey egg on it) then it is done. If not, leave in for another 5 minutes.
This recipe makes four servings. Leftovers are great to take to work for lunch!
