This recipe uses leftover roast cauliflower. I don’t even want to call it a recipe, because it is so easy, but I need to share it! Roast cauliflower is super delicious, and even more so when fried up with some eggs in the morning.
If you haven’t got any leftovers, cauliflower takes about 30min to roast in a 180ºC oven. Just cut into small pieces, toss with oil, salt and pepper and place in the oven.
1 cup leftover roast cauliflower pieces
1 tbsp. coconut oil
Salt and pepper
Parsley, to garnish
Heat the oil in a frying pan. Once hot, place the cauliflower in the pan and fry for 3-4 minutes. Turn the cauliflower over and fry the other side for another 2 minutes. Be careful, cauliflower seems to burn quite easily!
Push all the cauliflower onto one side of the frying pan and crack the eggs into the pan. Fry gently until eggs are cooked to your liking.
Serve the eggs on top of the cauliflower, season with salt, pepper and parsley.
