So many Irish recipes use bacon – and this one is no exception. On St. Patricks day I thought I would try an Irish recipe for breakfast, and came across this one on Irish Central. Containing eggs, bacon, cream what’s not to love about it?!
I also took an Irish Dancing class, which was a lot of fun! Highly energetic, an excellent way to work up a thirst for a pint of Guinness.
Ingredients – serves 2
Butter to grease two ramekins
2 tsp cream
¼ cup grated cheddar
1 tsp Dijon mustard
⅓ cup pancetta or diced bacon
Pre-heat the oven to 180ºC. Lightly grease two ramekins with butter.
Mix together the cheese, cream, mustard and bacon. Crack two eggs into each ramekin, then spoon half of the cheese mixture on top of each ramekin.
Place in the oven and bake for 15 minutes, until eggs are cooked. Serve on it’s own, with toast if you eat bread, or a side salad. Or strawberries as I have done in the photo. Strawberries are yum.
