Turkish Style Scrambled Eggs

This is a delicious way to change up scrambled eggs when you’re getting a bit bored with them. We ate some eggs done this style in Istanbul on our final morning – at our hotel breakfast.  It would be great for a lunch or light dinner as well!

Turkish style eggs

Ingredients – for 2 people

2 tsp butter
4 spring onions
2 tomatoes or 8ish cherry tomatoes
1/4 capsicum (red or green pepper)
4 eggs
40g feta cheese
1 tbsp. chopped parsley
Pepper

Directions

Dice the spring onions, tomatoes and pepper. Melt the butter in a hot frying pan. Add the vegetables and sauté until soft.
In a bowl, beat the eggs until there is no white remaining. Pour into the frying pan.
Allow to cook for a few seconds, then stir slowly a couple of times. Add the feta and parsley and combine gently. Season with some freshly ground pepper.
Once eggs are cooked to your liking, arrange on a plate and enjoy with a cup of coffee!
